Cinnamon Buns
This is a fantastic recipe, as good as, if not better then Cinabon’s.
- 1 cup warm water 110 degrees, warm to touch
- 3 tbsp. sugar
- 2 tbsp. (packages) of dry yeast
Place water, sugar and yeast in 3 cup bowl or measuring cup, stir.
Set aside. The yeast will take about 15 minutes to cure.
- 2 cups boiling water
- 1/4 cup of shortening
- 1/2 cup sugar
- 1/2 tsp. salt
Place water, sugar and shortening in very large bowl, mix and wait
until shortening has melted.
- 3 cups cold water
Add cold water slowly, checking the temperature, should be warm to the touch.
Change the temperature of the water if necessary. Remember if it is too hot or
too cold the yeast will not rise.
- 10 cups flour
Add 3 of the cups of flour and stir or beat with electric beaters.
Continue adding flour until it is no longer reasonable to use the beaters.
Pour out on table and begin needing in the remainder of the flour. Need
the dough and add flour for about 10 minutes or until it is no longer sticky.
Add more flour if necessary but 10 cups in total is usually all you will need.
Warm up oven to about 150, place dough in bowl, place warm wet cloth over dough and place bowl in the oven. Turn off
the oven. Wait until dough has risen to twice the original volume.
Punch down dough and need for 2 minutes. Break dough into two equal balls. Using rolling
pin, roll out one of the dough balls into a rectangle 36 inches by 24 inches (long side facing you).
- 1/2 cup warm butter
- 1 1/4 cups brown sugar
- 1/4 cup cinnamon
Spread the butter evenly over the surface of the dough, using a wooden spoon. Mix up
the brown sugar and cinnamon in a bowl and spread evenly over the butter and the dough.
Roll the dough from the top to the bottom creating a roll that is 36″ long.
Cut the dough with a sharp knife every 3″ creating 12 pinwheel segments. I like
to use a spatchula that is 3″ wide to mark off the segments. Place the wheels
in a greassed high walled 12×8 pan. Cover with a damp cloth and let rise for 10 minutes.
Using the other ball of dough, perform the above step again! Bake in 350 degree oven for 25 minutes.
- 1/2 cup warm butter
- 1/2 cup regular cream cheese
- 1 3/4 cup icing sugar
- 1 tbsp. vanilla
Beat on high until mixture is well mixed.
When rolls exit the oven place buttered mixture
over the top and let melt. Wait 5 minutes and serve.
Rolls can be frozen and reheated in the microwave oven for 30 seconds. They will be warm
and very tasty.
