Pancakes
Here is a recipe for that traditional
food.
- 1 1/2 cups sifted flour
- 3 tbsp. sugar
- 1/2 tsp. salt
- 1 3/4 tsp. baking powder
- 1 egg (separated)
- 3 tbsp. melted butter
- 1 cup milk
Sift the flour, sugar, salt, and baking powder into a bowl then
resift. Combine the milk, butter, and egg yolk and beat until well
mixed. Mix the liquid into the dry ingredients with a wooden spoon.
Be careful not to overmix. Beat the egg white until it is stiff then
fold it into the batter. Heat a frying pan over a medium-high flame
until it is evenly heated. Melt a small amount of butter into the pan
and add the pancake mixture. Cook until the mixture starts to bubble
then flip the pancake. Wrap the pancakes in a tea towel and store
them in a warm oven until ready to serve. Serve on warm plates with
butter and maple syrup.
Makes approximately eight pancakes.
